We’ve all heard the great advice to eat more leafy green vegetables. So, you’ve made the excellent first step towards eating healthier and you’re faced with a plethora of choices at the salad bar, but now what?
Sure, kale got all of the good press this year but don’t ignore some of your other options, including good old romaine lettuce. It’s a big step up from iceberg lettuce, plus it’s extremely low in calories and high in water. It’s high in folic acid and a good source of vitamins and minerals such as vitamin A, vitamin K, manganese, potassium, iron, and copper. On top of it all, it’s also a source of dietary fiber and tastes delicious. Some people, especially kids, may have a hard time with the taste of dark leafy greens, so romaine can be a good transition food to get them used to it!
